Pulihora

PULIHORA(also called asTamrind rice)was offered as prasadam for GOD during festive seasons, whereas temple style pulihora was different.     
            Andhra Pulihora is a tangy rice dish loaded with tamrind and turmeric.  Its not only flavorful but also easy to prepare. Follow step by step cooking instructions.



Ingredients:
  1. Boiled rice - 1/2 kg
  2. Turmeric - 3 pinches
  3. Refined oil for mixing with rice - 1 tbsp
  4. Green chillies - 7
  5. Ginger - 1 inch
  6. Jaggery - 1 tbsp
  7. Tamrind - Handful
  8. Salt

For Thadka:
  1. Groundnut oil - 5 tbsp
  2. 2Ground nuts
  3. Red chillies - 4
  4. Curry leaves - spring
  5. Mustard seeds - 1/2 tbsp
  6. Black gram - 1 1/2 tbsp
  7. Urad dal - 1 1/2 tbsp
  8. Hing - pinch
  9. Cashews
  10. Methi seeds - 1/3 tbsp

Preparation:
Take handful of tamrind to a bowl and soak it for an hour. Now extract tamrind pulp by squeezing it and filter the pulp. Add required amount of salt and jaggery to the extracted pulp. Boil this extract for about 15mins to form a thick paste.



Method:
1.For thadka, heat groundnut oil and add groundnuts, cashews, mustard seeds, urad dal, black gram, red chillies, methi seeds and fry them till groundnut turns golden brown colour. Now add redchillies, curry leaves, hing and turn off the flame.



2.Add refined oil, ginger, turmeric, green chillies to the boiled rice and mix them well.


3.Now add thadka and prepared tamrind paste(adjust according to your taste) to the rice mixture and mix it well.


4.If Pulihora is too dry add some more oil.
Now your dish is ready to serve.
